Strawberry and pistachio cake (Fraisier)

Strawberry and pistachio go very well together. That’s why I decided to add some pistachio praline to the diplomat cream, to change from the traditional vanilla flavoured cream. For the design, my inspiration is the strawberry and pistachio tart of French chef Aurélien Cohen.



This cake is made of:

  • A genoise sponge soaked with a strawberry syrup

  • Pistachio praline

  • Pistachio diplomat cream

  • Strawberry compote

  • Raw strawberries

  • Pistachio bits



The diplomat cream was not set enough due to the addition of the pistachio praline in it, so that’s something to improve for next time. However, it had a very nice silky texture!
